Creamy Tomato & Cashew Gravy:

One Simple Sauce, Endless Possibilities

Every week before her next OrganicBox delivery arrives, Alice looks through her fridge to see what vegetables are left and challenges herself to turn them into something delicious.

This week, it was the last of her tomatoes waiting to be rescued.

Rather than making another pasta sauce, Alice created a rich, creamy tomato and cashew gravy that became the foundation for not one, but several meals.

One of the things she loves most about cooking is creating recipes that can be stretched, frozen and reinvented throughout the week.

🍅 Creamy Tomato & Cashew Gravy

This week's Fridge Rescue was all about using up the last of the tomatoes before my next OrganicBox arrived.

I roughly chopped the tomatoes and cooked them in a frying pan with a little ghee. I like to heat the ghee until it's just starting to smoke before adding the tomatoes, as it gives them a lovely depth of flavour.

While the tomatoes were cooking, I soaked a handful of cashews in water for about 15 minutes.

Once drained, I added them to the tomatoes and cooked everything together for another 8–10 minutes until the cashews had softened.

After letting the mixture cool completely, I blended everything into a smooth, creamy gravy.

I returned it to the pan with a little more ghee and seasoned it with salt, ½ teaspoon of garam masala and ¼ teaspoon of turmeric. If you enjoy a little heat, a pinch of chilli powder or flakes works beautifully too.

To stretch the sauce for another meal, I stirred through a spoonful of tomato paste and a little extra water until it reached the consistency I was after.

I separated half of the gravy to freeze for another day.

For dinner that night, I added a handful of pre-cooked cauliflower, pumpkin, carrots and beans that were left in the fridge and gently warmed everything through.

For my next meal, I'll simply reheat the gravy, remove it from the heat and stir through cubes of paneer just before serving.

One simple sauce.

Two completely different meals.

And another successful Fridge Rescue.

This tomato and cashew gravy is a wonderful base for using up leftover vegetables or adding paneer if you have some on hand.

Once you've made the sauce, simply add whatever vegetables are left in your fridge and you'll have a completely different meal every time.

It's also perfect for freezing, making future dinners even quicker and helping ensure nothing from your OrganicBox goes to waste.

Sometimes the best Fridge Rescue starts with a single ingredient.

This week, it was tomatoes.

A handful of pantry staples.

A freezer-friendly sauce.

And endless meal possibilities.
