A Week of Reflections
This week’s Fridge Rescue is a little different.
Rather than sharing one recipe, I’ve been reflecting on just how much my cooking has changed since having my OrganicBox delivered each week.
And apparently, I’m not the only one who has noticed.
My husband commented this week that he has never known me to spend so much time in the kitchen! 😁
He’s probably right.
But I think what has changed most is how I think about cooking.
Thank Goodness for the Freezer
Earlier this week I was feeling a little under the weather and was very grateful to discover I still had some of my homemade broccoli and cauliflower soup in the freezer.
It defrosted and reheated beautifully.
Having a homemade meal ready to go when I really didn’t feel like cooking reminded me why making a little extra and freezing it is so worthwhile.
And apparently I took my own advice...
Thursday night at about 8pm, the night before my next OrganicBox delivery, I realised I still had some broccoli and cauliflower in the fridge.
So, up I got.
Within about 30 minutes, another batch of soup was made and ready for the freezer.
No wasted veggies, and future Alice will be very grateful!
Trying New Things
As the weeks have gone by, I’ve found myself venturing online more and more, looking for simple, healthy recipes and different ways to use the fresh organic produce in my box.
This week I tried zucchini boats for the first time.
I stuffed them with ricotta cheese, sun-dried tomatoes, spring onions, fresh garlic, lemon rind, parmesan and oregano.
They were delicious!
I also tried another new recipe, mushroom stroganoff with black beans.
Adding the black beans gave me another opportunity to include some extra plant-based protein in the meal, which is something I’m increasingly looking for when I’m searching for new recipe ideas.
And Then There Was Friday Lunch...
Friday’s lunch was a fresh kale salad with blanched green beans and snow peas.
And even Merv, our greyhound, got involved in this week’s Fridge Rescue with some roasted pumpkin. 🐾
Nothing going to waste around here!
The Biggest Change
I think this is what I’m enjoying most about the whole experience.
I’m no longer deciding what I want to cook and then going out to buy all the ingredients.
I’m doing it the other way around.
I look at the beautiful seasonal produce I already have and ask myself:
“What can I make with this?”
That simple change has encouraged me to try recipes I probably would never have considered before.
I’m cooking with more variety.
I’m adding more plant-based foods.
I’m making extra meals for the freezer.
I’m getting creative.
And most importantly, I’m motivated to use everything and waste as little as possible.

Let the food you already have decide what you’re cooking.
Before planning another meal or buying more ingredients, take a look in your fridge.
A couple of vegetables might lead you to a recipe you’ve never tried before, and you might discover a new favourite along the way.
For me, that has been one of the biggest lessons from my weekly Fridge Rescues.
