A New Recipe from Leftover Veggies
This week’s Fridge Rescue started with me looking at the last of my broccoli, cauliflower and cucumber and wondering what I could make with them.
Fortunately, I also had a purple onion in the fridge and some fresh parsley growing in the garden, so I had a pretty good starting point!
Since having my OrganicBox delivered each week, I’ve found myself becoming much more adventurous with my cooking.
Instead of sticking to the same recipes, I’m searching for new ideas, trying different combinations and particularly looking for recipes that give me a little extra boost of protein.
And that’s exactly what happened this week.
A Little Recipe Inspiration
I’m grateful to have discovered Caitlin Latessa-Greene, @starinfinitefood, and her wonderful recipes.
This week I found her Roasted Broccoli Salad with Crispy White Bean Crumble & Lemon Caper Cream, and it looked like the perfect starting point for the vegetables I had left.
I didn’t have exactly the same ingredients, but that’s really what Fridge Rescue is all about!
Rather than letting my leftover cauliflower go to waste, I added that too and adapted the recipe around what I already had.
Broccoli, cauliflower, cucumber, purple onion and fresh parsley all found their way into dinner.
And the verdict?
Delicious!
It was fresh, full of flavour and something completely different from what I would normally have thought to make with those last few vegetables.
From Using Things Up to Trying Something New
I think this is one of the unexpected things I’ve really enjoyed since getting my weekly OrganicBox.
Having beautiful fresh organic produce in the fridge has encouraged me to experiment.
I used to look at the last few vegetables and think:
“How am I going to use these up?”
Now I find myself thinking:
“What new recipe can I discover?”
And I’m loving it.
Sometimes a recipe doesn’t need to match what you have in the fridge perfectly. Use it for inspiration, make a few swaps and see what happens.
You might just discover a new favourite.
💚 Alice’s Fridge Rescue Tip
Don’t be afraid to adapt a recipe to what you already have.
If a recipe calls for broccoli and you’ve also got cauliflower that needs using, throw it in. Have some herbs growing in the garden? Add those too.
A recipe can simply be your starting point.
Using what you already have saves food from going to waste and can lead you to combinations you may never have tried otherwise.
A few leftover vegetables.
A little inspiration.
A completely new dinner.
Every veggie enjoyed. Nothing wasted. 💚
