Who Knew Cabbage Could Taste This Good?

This week’s Fridge Rescue started with a cabbage.

Not exactly the most exciting opening to a story, I know! 😂

It had been sitting in my fridge since last week’s OrganicBox delivery and was still as fresh as the day it arrived. So rather than letting it sit there for another week, I decided it was time to find something different to do with it.

And I am so glad I did.

I found inspiration from Caitlin Latessa-Greene at @starinfinitefood and her recipe for roasted caramelised cabbage with crispy capers, garlic crunch and creamy honey Dijon (see recipe below)

Honestly, I never would have imagined that a meal with cabbage as the main ingredient could taste this good.

I Think Cabbage Has Officially Won Me Over

The cabbage was roasted until beautifully caramelised, with those gorgeous crispy edges, and then all the other flavours came together around it.  It was simple, but absolutely delicious. The kind of meal that melts in your mouth and leaves you wanting more.  And I have to say, I feel like I’ve been completely transformed when it comes to cabbage!

Before starting these weekly Fridge Rescues, I probably would have looked at a cabbage as just another vegetable I needed to find a way to use.  Now I’m discovering just how much you can actually do with it.

Roast it. Turn it into soup. Add it to stir-fries. Make salads. Experiment with different dressings and flavours.

Who knew?

Our Fridge Has Never Been So Full... Yet We’re Wasting Less

As I was sitting there after dinner, I realised something else that surprised me.

Our fridge has never been so full, but at the same time we are wasting less.

That probably sounds like a contradiction, but it’s true.  Having my OrganicBox arrive each week has completely changed the way I look at what’s in the fridge. Instead of seeing vegetables that I need to “use up”, I’m starting to see possibilities.  I’m making more meals from scratch. I’m searching for new recipes.  I’m getting creative with ingredients I already have.  I’m making hubby’s meat-based dishes alongside my own vegetarian meals. And even takeaway and eating out seems less tempting lately.

There’s something really satisfying about opening the fridge, seeing all that beautiful fresh produce and thinking:

“What can I make with this?”

It’s Become More Than Just Using Up the Veggies

When I started sharing my Fridge Rescues, the idea was really simple, use what was left before the next OrganicBox arrived and waste as little as possible.

But somewhere along the way, it has become more than that. I’m trying foods in completely different ways. I’m cooking more, eating more variety and I’m becoming more confident experimenting in the kitchen.

And vegetables I may once have overlooked are becoming the starting point for some of my favourite meals.

This week, that vegetable just happened to be a cabbage. 💚

Alice’s Fridge Rescue Tip

Before deciding you don’t like a vegetable, try cooking it a completely different way.

Roasting can transform vegetables you might normally boil, steam or throw into a stir-fry. Caramelised edges, a great dressing and a few crunchy toppings can turn something as simple as cabbage into the star of the meal.

Sometimes the best Fridge Rescues aren’t about disguising what’s left.

They’re about giving it the chance to shine.

And this cabbage certainly did that.

Recipe Inspiration

Roasted Caramelised Cabbage with Crispy Capers, Garlic Crunch & Creamy Honey Dijon

For the cabbage:
1 small cabbage, sliced into 6 wedges
1-2 tbsp EV olive oil
Salt and pepper to taste
3/4 cup veggie broth

Topping:
2 tbsp EV Olive Oil
3 tbsp capers
3 cloves garlic, sliced into thin slivers
1/3 cup slivered almonds
3 tbsp chopped fresh dill
1/2 tbsp lemon zest
Pinch salt

Dressing:
2 tbsp honey
2 tbsp EV Olive Oil
3 tbsp Dijon mustard
2 tsp lemon juice
Pinch salt
2 tbsp mayonnaise
2 tsp chopped fresh dill
1/4 tsp garlic powder

1. Preheat the oven to 425.
2. Heat a large skillet over medium-high heat, add the oil then sear the cabbage on each side for 2-3 minutes per side. Add salt and pepper to taste to one side. The wedges should be browned. Add the broth to the skillet, then cover and place the skillet in the oven for 15-20 minutes. Remove the cover and place it back in the oven for another 5-10 minutes, until the cabbage is tender and the liquid is evaporated. 
3. While the cabbage roasts, make the topping. Add 1 tbsp of the olive oil to a separate smaller skillet and heat over medium-high. Add the capers, garlic and almonds. Cook for about 2 minutes until the garlic and almonds are browned, but do not burn. Remove and place on a paper towel. Add the mixture to a bowl once it is cooled the add the dill, lemon zest and salt. Toss.
4. Make the dressing. Add all ingredients to the jar, then whisk or shake to combine.
5. Plate the cabbage, drizzle with dressing and then top with the crunch.
