Creamy Cauliflower & Cabbage Soup:
A Delicious Way to Rescue Your Last Veggies

Most weeks lately, I've been making the best ever cauliflower and broccoli cheese bake. It's become a bit of a favourite in our house.
This week, though, I still had half a cabbage and a cauliflower sitting in the fridge, so I decided to try something different.
I searched online for a little inspiration, then adapted a recipe using ingredients I already had at home.
One of the things I love about cooking now is that I rarely follow recipes exactly anymore. I use them as a guide and then adjust them to suit whatever vegetables are left in my OrganicBox and what I already have in the pantry.
🥣 Creamy Cauliflower & Cabbage Soup
I slowly cooked a chopped onion and a couple of diced garlic cloves in butter until they were soft and fragrant.
Next, I added the chopped cabbage and cauliflower, along with about two cups of vegetable stock and a can of coconut milk. Once everything came to a gentle simmer, I covered the pot and let it cook until the vegetables were tender.
After allowing it to cool slightly, I blended the soup until it was smooth and creamy.
I returned it to a low heat and stirred through about half a cup of cream, a generous handful (around one cup) of grated cheddar and about half a cup of parmesan cheese.
The trick is to keep the heat low once the cheese goes in, so the soup stays silky smooth.
To finish, I seasoned it with sea salt, freshly cracked black pepper and just a pinch of nutmeg.
The result was incredible.
It was rich, creamy and full of flavour.
It was so, so, so good! 🙌
Even better, our neighbours enjoyed it for dinner that night too. 😁
It's another reminder that sometimes all you need is a couple of leftover vegetables and a little inspiration to create something you'll definitely make again.
