Crispy Zucchini & Parmesan Bites: The Tastiest Way to Rescue Your Last Zucchini

This week, it was zucchini's turn.
Instead of adding it to another stir-fry or soup, Alice created crispy zucchini and parmesan bites that are golden on the outside, tender in the middle and guaranteed to disappear quickly from the dinner table.
Whether you serve them alongside a roast, your favourite main meal or simply enjoy them as a snack, they're proof that simple ingredients often make the best meals.
🥒 Crispy Zucchini & Parmesan Bites
If you still have zucchini waiting in the fridge, this has become one of my favourite ways to use it.
These crispy zucchini and parmesan bites are perfect as a side with a roast or your favourite main meal. They're also delicious as a snack dipped in a little Kewpie mayonnaise.
To make them, simply cut each zucchini in half lengthways, then slice each half into thirds or quarters depending on how thick they are.
Pat the zucchini dry with paper towel before drizzling with a little olive oil.
Next, coat each piece generously with breadcrumbs and plenty of grated parmesan cheese before finishing with another light drizzle of olive oil.
Bake in a 200°C oven for 20–30 minutes, or until the zucchini is tender and the coating is beautifully golden and crispy.
The best part?
They reheat brilliantly in the oven or air fryer for up to three days, making them perfect for lunches or an easy side dish later in the week.
Simple.
Crunchy.
Absolutely delicious.

🥬 Bonus Fridge Rescue Tip: Don't Waste Your Celery
If you've still got celery left at the end of the week, don't let it go to waste.
Celery freezes really well and is perfect to have on hand for lamb shanks, casseroles, stews and soups.
Simply chop it into your preferred size, then blanch it in boiling water for 2–3 minutes before transferring it straight into iced water. This helps retain its colour, texture and nutrients.
Drain well, pat dry, then spread the celery in a single layer on a baking paper-lined tray. Freeze for around two hours before transferring it to a freezer bag or airtight container.
It will keep beautifully in the freezer for 6–12 months, ready to add straight into your favourite slow-cooked meals whenever you need it.
