Alice’s Fridge Rescue #11 – Kale Two Ways
This week’s leftover was a bunch of kale.
Kale is always a favourite of mine for throwing together a quick fresh salad, but this week it ended up giving me two Fridge Rescues instead of one.
Lunch on day one became a fresh kale salad using a few other bits and pieces I had left.
And the kale that didn’t make it into lunch?
That became tomorrow’s snack.
Kale Crunch Salad
I started by massaging the kale for about a minute with 2 teaspoons of olive oil and ¼ teaspoon of salt.
If you don’t normally massage your kale, it really does make a difference. It helps soften the leaves and makes them much nicer to eat raw.
Then I added a few things I already had on hand:
- A small amount of leftover butter beans
- Blanched green beans
- White sesame seeds
- Chopped pistachios
- Dried cranberries
The green beans were another little rescue. I’d blanched extra so I could keep some in the fridge as an easy, healthy snack.
Quick Lemon & Parmesan Dressing
For the dressing, everything simply went into a jar:
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 small clove garlic, minced
- Black pepper to taste
- Grated parmesan cheese
Give it a good shake, pour it over the salad and lunch is done.
Fresh, crunchy and made almost entirely from things I already had.
But then came day two…
The Leftover Kale Became Kale Chips
There was more kale than I needed for my salad, and because it had already been dressed and seasoned, I didn’t want it sitting in the fridge going to waste.
So I made kale chips.
There was nothing else to add.
I simply spread the remaining kale leaves onto a baking paper-lined oven tray and popped them into a 130°C oven for around 20 minutes.
Keep an eye on them towards the end. You want them crisp, but take them out before they start turning brown.
They came out crispy, crunchy and already full of flavour from the lemon, garlic and parmesan dressing.
And just like that, yesterday’s leftover salad ingredient became today’s snack.

Sometimes the best Fridge Rescues happen when you give leftovers a second life.
What started as a bunch of kale became a fresh salad for lunch, and what was left became crispy kale chips for the next day.
Before leaving something in the fridge for another day, have another look and ask:
“What else could I turn this into?”
One bunch of kale.
Two completely different ways to enjoy it.
