That Feeling When the OrganicBox Arrives
I must say, I was very excited about my OrganicBox delivery this week!
After missing a week and having to make do with the staples I had at home, it felt really good unpacking my box of fresh goodies. I’m already looking forward to all the great cook-ups ahead.
The last couple of weeks have been a little challenging. With an injured greyhound at home, getting to the shops has been that much harder, and I’ve definitely noticed the difference between cooking with fresh produce and simply getting by with whatever is in the cupboard.
Over the past few months, I’ve also really started noticing the difference between organic and non-organic produce.
I do still buy non-organic occasionally when my organic produce is running low or something isn’t in season, but I have to admit, I don’t love having to cross over to the other side! 😁
So, what’s planned for this week?
First up, those beautiful purple carrots.
I love making carrot, beetroot and apple cold-pressed juice, and this will be my first time juicing purple carrots. I’m very curious to see what colour it turns out!
I’m also planning a special dinner for my in-laws while hubby is away overseas, with three vegetarian-based dishes on the menu. Having a fridge full of fresh vegetables again means I’ve got plenty to work with.
Missing a delivery also made me appreciate my freezer stash.
Thankfully, I still had some of my homemade organic-based soups tucked away in the freezer, which gave me an easy lunch when I needed it.
That’s probably one of the biggest things I’ve learnt from doing my Fridge Rescues. Using up your vegetables doesn’t always mean you have to eat everything that week. Sometimes rescuing them means making an extra batch of soup, sauce or another meal and freezing it for later.
It certainly came in handy this time.
But there’s nothing quite like opening that box of fresh produce again and knowing there are plenty of delicious meals waiting to be created.
I think I’ve officially realised just how much my weekly OrganicBox has become part of my routine. 💚
💚 Alice’s Fridge Rescue Tip
Don’t forget about your freezer.
If you have vegetables that need using but don’t need another meal right now, turn them into something you can freeze.
Having a few homemade soups or meals tucked away can be an absolute lifesaver on the weeks when life doesn’t quite go to plan.
