Coconut Black Bean & Veggie Curry

Protein: 1 tin black beans

From the Box

  • Carrots – 200g, diced
  • Zucchini – ½ (~150g) diced
  • Brown onion – 1 medium (~120g) diced
  • Baby spinach – large handful
  • Mushrooms – optional handful

Pantry

1 tin coconut milk, curry paste or powder, rice

  1. Sauté onion in oil until soft.
  2. Add curry paste and cook 1 minute.
  3. Add carrots, zucchini and mushrooms.
  4. Pour in coconut milk and simmer 12–15 minutes.
  5. Stir in black beans and spinach and cook 3 minutes.
  6. Serve with rice.
