Roasted Purple Cabbage & Green Beans: A Simple Way to Rescue the Last of Your OrganicBox
Every week before her next OrganicBox delivery arrives, Alice challenges herself to use every last vegetable left in the fridge.
This week, the final two vegetables waiting to be enjoyed were a purple cabbage and a handful of green beans.
Rather than overthinking it, Alice kept things beautifully simple. A drizzle of olive oil, a few pantry staples and a hot oven were all it took to transform these everyday vegetables into a colourful, flavour-packed dish.
🥬 Roasted Purple Cabbage & Green Beans
This week's Fridge Rescue started with a purple cabbage and some green beans.
I sliced the cabbage into roughly 1.5cm strips and trimmed the ends from the green beans.
Everything was tossed together with a drizzle of olive oil, a sprinkle of salt, freshly cracked black pepper and a little garlic powder.
I spread the vegetables onto a baking tray and roasted them in a 200°C oven for around 20 minutes.
For the final five minutes, I sprinkled grated parmesan cheese over the top and returned the tray to the oven until the cheese had melted into a delicious golden topping.
To finish, I added a sprinkle of sesame seeds for a little extra crunch and flavour.
The result was a colourful roasted vegetable dish that was just as delicious served alongside dinner as it was enjoyed on its own for a light meal.
Sometimes the simplest meals are the ones that surprise you the most.
