Zucchini Sweet Corn Pasta

  • 400g pasta (penne or spaghetti)
  • 1 zucchini, diced

  • 1/2 cup grated parmesan

Add the minced garlic and cook for another minute until fragrant. Add the corn kernels and diced zucchini. Cook for 5 minutes until the zucchini softens and the corn starts to caramelise. Pour in the milk and bring to a gentle simmer. Stir in half the parmesan. Add the drained pasta to the pan along with a splash of pasta water. Toss everything together until the sauce coats the pasta. Season with salt, pepper, and lemon zest. Add cooked sliced organic chicken at this stage if you want extra protein. Serve in bowls topped with the remaining parmesan and fresh herbs.
