Zucchini Fritters
These crispy zucchini fritters are a delicious way to use up your organic zucchini. Golden on the outside, tender on the inside, they make a great light lunch, side dish, or even a healthy snack. Serve with a dollop of yoghurt or alongside grilled meats.
- 500g zucchini, grated
- 1 cup baby spinach, finely chopped
- 2 cups rocket leaves (for serving)
- 300g cucumber, sliced (for serving)
- 3 Organic Eggs
- 100g Organic Feta - crumbled
- Organic Greek Yoghurt - for serving
- ½ cup plain flour
- ½ cup grated cheese
- 2 spring onions, finely sliced
- 1 clove garlic, minced
- Salt and pepper
- Oil for frying
- Grate zucchini and place in a clean tea towel. Squeeze out as much moisture as possible.
- In a large bowl, combine squeezed zucchini, chopped spinach, eggs, flour, feta, grated cheese, spring onions, and garlic.
- Season well with salt and pepper. Mix until combined.
- Heat 2 tablespoons of oil in a large non-stick pan over medium heat.
- Spoon ¼ cup of mixture per fritter into the pan. Flatten slightly with a spatula.
- Cook for 3-4 minutes each side until golden brown and cooked through.
- Drain on a paper towel and keep warm while cooking the remaining fritters.
- Serve hot with rocket leaves, cucumber slices, and a dollop of Greek yoghurt.
Crispy Secret: The key is squeezing out ALL the moisture from the zucchini. Wet zucchini makes soggy fritters!
