A tray-bake style meal that works perfectly as a light vegetarian dinner or a "heavy" side.

Ingredients: 1kg potatoes, 1 ear of sweet corn (kernels cut off), 1 zucchini (grated and squeezed dry), 1/2 bag baby spinach.
Method: Boil potatoes until soft, place on a tray and "smash" them flat with a glass. Top with corn kernels and grated zucchini. Spray with oil and grill until crispy. Serve on a bed of baby spinach with a dollop of yogurt or dressing (pantry).
