Zucchini & Carrot Slice with Garden Salad

  • Eggs Zucchini
  • carrots
  • baby spinach
  • cucumber
  • tomatoes.

  1. Preheat oven to 180°C.
  2. Grate 0.4kg Zucchini and 1 large Carrot. Squeeze the zucchini dry using a tea towel.
  3. Whisk 5 Eggs with 1/2 cup self-raising flour and 1 cup grated cheese.
  4. Stir in the veggies and bake in a greased dish for 30–35 mins.
  5. Side: Serve with a salad of Baby SpinachCucumber, and Tomatoes.
