Zucchini & Carrot Slice with Garden Salad

- Eggs Zucchini
- carrots
- baby spinach
- cucumber
- tomatoes.
- Preheat oven to 180°C.
- Grate 0.4kg Zucchini and 1 large Carrot. Squeeze the zucchini dry using a tea towel.
- Whisk 5 Eggs with 1/2 cup self-raising flour and 1 cup grated cheese.
- Stir in the veggies and bake in a greased dish for 30–35 mins.
- Side: Serve with a salad of Baby Spinach, Cucumber, and Tomatoes.
