Zucchini Broccoli Frittata

A frittata is one of the easiest ways to turn a few organic vegetables into a proper, nourishing meal. Broccoli brings vitamin C and fibre, zucchini keeps things light, and the eggs add protein to keep you full.

Serves: 4 | Cooking Time: 30 minutes

Ingredients:

  • 1 zucchini, grated or thinly sliced
  • 1 cup broccoli florets, chopped small
  • 1 tomato, sliced
  • 1 red onion, finely diced
  • Organic Chicken 200g, cooked and diced (optional)
  • 8 Organic eggs
  • 1/4 cup milk
  • 1/2 cup grated cheese
  • 1 tablespoon olive oil
  • Salt and pepper

Directions:

  • Preheat the oven to 180C. Heat the olive oil in an ovenproof frying pan over medium heat.
  • Cook the onion for 3 minutes until soft. Add the broccoli and zucchini and cook for another 5 minutes.
  • Whisk the eggs, milk and half the cheese together in a bowl. Season with salt and pepper.
  • If using chicken, scatter the diced pieces over the veg in the pan.
  • Pour the egg mix over the top. Lay the tomato slices on and scatter over the rest of the cheese.
  • Cook on the stovetop for 3 minutes until the edges start to set.
  • Transfer the pan to the oven and bake for 15 minutes, until the centre is set and the top is golden.

Serving suggestions: Serve warm or at room temperature with a green salad. It cuts into wedges for lunchboxes and picnics.

Storage: You can keep it in the fridge for up to 4 days. Eat cold or reheat slices in the microwave. Wrap individual portions for grab and go lunches.

Variations: Add flaked fish instead of chicken for more protein. Throw in chopped celery or grated carrot to use up more of the box, or swap the cheese for whatever you have in the fridge.
