Zesty Chicken & Snow Pea Stir-fry
A bright, crunchy, and fast meal. Using the cucumber and lettuce as a fresh side or base helps balance the heat of the stir-fry.
- 300g Chicken breast or thigh (sliced into strips)
- 1 cup Snow Peas (trimmed)
- 1 Carrot (julienned/thin sticks)
- 1 Zucchini (sliced into half-moons)
- 1 cup Broccoli florets
- Cos Lettuce leaves (for serving)
- Heat a splash of oil in a wok or large frying pan over high heat.
- Add chicken strips and cook until golden and cooked through. Remove and set aside.
- In the same pan, toss in the carrots, broccoli, and zucchini. Stir-fry for 3–4 minutes.
- Add the snow peas last (to keep them crunchy) and return the chicken to the pan.
- Toss everything together for another minute. Season with salt, pepper, or any pantry sauces you have (like soy or ginger).
- Serve the stir-fry inside Cos lettuce cups for a fresh crunch.
