Zesty Chicken & Snow Pea Stir-fry

A bright, crunchy, and fast meal. Using the cucumber and lettuce as a fresh side or base helps balance the heat of the stir-fry.

Serves: 2 | Cooking Time: 15 minutes

  • 300g Chicken breast or thigh (sliced into strips)
  • 1 cup Snow Peas (trimmed)
  • 1 Carrot (julienned/thin sticks)
  • 1 Zucchini (sliced into half-moons)
  • 1 cup Broccoli florets
  • Cos Lettuce leaves (for serving)

  1. Heat a splash of oil in a wok or large frying pan over high heat.
  2. Add chicken strips and cook until golden and cooked through. Remove and set aside.
  3. In the same pan, toss in the carrots, broccoli, and zucchini. Stir-fry for 3–4 minutes.
  4. Add the snow peas last (to keep them crunchy) and return the chicken to the pan.
  5. Toss everything together for another minute. Season with salt, pepper, or any pantry sauces you have (like soy or ginger).
  6. Serve the stir-fry inside Cos lettuce cups for a fresh crunch.
