Zesty Beef & Rainbow Veggie Stir-Fry

A high-heat, fast-paced dinner using your crunchier vegetables.

  • 750g Beef strips
  • 1 head Broccoli, florets and sliced stalk
  • 2 Carrots, julienned
  • 1 Zucchini, sliced
  • 2 Yellow Banana Capsicums, sliced
  • 2 cups Rocket
  • 3 tbsp Soy Sauce & 1 tbsp Honey
  • 1 tbsp Grated Ginger
  • Seasoning: Salt, 1/2 tsp Chili flakes

  • Heat a wok with oil until smoking. Sear beef strips in two batches so they don't stew; remove and set aside.
  • Toss in broccoli stalks and carrots; stir-fry for 3 minutes with a splash of water.
  • Add capsicum, zucchini, and broccoli florets; fry for another 3 minutes.
  • Whisk soy sauce, honey, and ginger together; pour into the pan with the beef.
  • Toss everything to glaze. Serve topped with fresh rocket for a peppery crunch.
