Warm Veggie, Avocado & Red Cabbage Noodle Bowl

From the Box

  • Red cabbage – ½ head, finely sliced
  • Leek – 1, sliced
  • Broccoli – 200g, florets
  • Snow peas – remaining if any
  • Avocado – 1, sliced
  • Cucumber – ½, sliced

Pantry

Noodles, soy sauce, sesame oil, garlic, optional fried egg

  1. Cook noodles.
  2. Sauté leek and garlic in oil.
  3. Add broccoli, cabbage and snow peas and stir fry 5 minutes.
  4. Toss noodles with soy sauce and sesame oil.
  5. Top with avocado and cucumber.

Optional: add fried eggs for extra protein.
