Warm Roasted Veggie & Rice Bowl with Lemon Dressing

Vegetarian (grain-based meal)

From Your Box:

  • 200g potatoes (cubed)
  • 250g beetroot (cubed small)
  • 1 zucchini (~150g, sliced)
  • Remaining ½ cos lettuce
  • 1 apple (sliced thin)
  • ½ cucumber (sliced)

Pantry:

Cooked rice, olive oil, lemon juice, honey, salt, pepper

  1. Roast potatoes and beetroot at 200°C for 25 minutes.
  2. Add zucchini for final 10 minutes.
  3. Arrange lettuce, cucumber and apple in bowls.
  4. Top with warm roasted veggies and rice.
  5. Drizzle with lemon, olive oil and a touch of honey.
