Warm Chicken & Snow Pea Salad with Crispy Potatoes

A warm salad is perfect for Adelaide summer evenings when you want comfort but freshness.

  • Produce Used: Rocket (1 bag), Snow Peas (0.1kg), Cucumber (0.3kg), Tomatoes (remaining 0.25kg), Potatoes (remaining 0.5kg).
  • Protein: Pasture Raised Chicken Tenders (500g).

  1. Dice remaining Potatoes into small cubes and roast or pan-fry until crispy.
  2. Pan-fry the Chicken Tenders with salt and pepper until golden.
  3. In a large salad bowl, combine fresh Rocket, sliced Cucumber, halved Tomatoes, and raw Snow Peas (slice them lengthways for a gourmet look).
  4. Toss the salad with the warm potatoes and chicken. Dress with olive oil and vinegar.
