Warm Banana Bread Pudding

A handy way to use ripe bananas and any bread that needs using up.

  • 3–4 ripe bananas, approximately 400g peeled

Other ingredients

  • 6–8 slices bread
  • 3 eggs
  • 2 cups milk
  • ¼ cup brown sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 20g butter
  • Optional: handful of sultanas

  1. Preheat oven to 180°C conventional / 160°C fan-forced.
  2. Lightly grease a medium baking dish.
  3. Butter the bread lightly and cut into rough pieces.
  4. Slice bananas.
  5. Layer bread and banana in the baking dish.
  6. Whisk eggs, milk, brown sugar, vanilla and cinnamon together.
  7. Pour evenly over the bread.
  8. Gently press the bread down so it absorbs the custard.
  9. Leave to stand for 10 minutes.
  10. Bake for approximately 35–40 minutes, until golden on top and the custard is just set in the centre.
  11. Rest for 5–10 minutes before serving.

Serve warm by itself or with yoghurt, cream or custard.
