Warm Banana Bread Pudding
A handy way to use ripe bananas and any bread that needs using up.

- 3–4 ripe bananas, approximately 400g peeled
Other ingredients
- 6–8 slices bread
- 3 eggs
- 2 cups milk
- ¼ cup brown sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 20g butter
- Optional: handful of sultanas
- Preheat oven to 180°C conventional / 160°C fan-forced.
- Lightly grease a medium baking dish.
- Butter the bread lightly and cut into rough pieces.
- Slice bananas.
- Layer bread and banana in the baking dish.
- Whisk eggs, milk, brown sugar, vanilla and cinnamon together.
- Pour evenly over the bread.
- Gently press the bread down so it absorbs the custard.
- Leave to stand for 10 minutes.
- Bake for approximately 35–40 minutes, until golden on top and the custard is just set in the centre.
- Rest for 5–10 minutes before serving.
Serve warm by itself or with yoghurt, cream or custard.
