  • 600g apples, peeled, cored and sliced
  • 2 bananas, sliced

Pantry and additional ingredients

  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar or maple syrup
  • ½ cup rolled oats
  • ½ cup plain flour
  • ¼ cup brown sugar
  • 60g cold butter, cubed
  • Custard or yoghurt, to serve

  1. Preheat oven to 180°C (160°C fan-forced).
  2. Place sliced apples in a medium baking dish.
  3. Add lemon juice, cinnamon and 1 tablespoon brown sugar or maple syrup. Toss gently.
  4. Cover with foil and bake for 10 minutes to begin softening the apples.
  5. Meanwhile, combine rolled oats, flour and remaining brown sugar in a mixing bowl.
  6. Add cold butter and rub into the dry ingredients using your fingertips until the mixture resembles coarse breadcrumbs.
  7. Remove apples from the oven and gently stir through sliced bananas.
  8. Sprinkle crumble mixture evenly over the fruit.
  9. Return to the oven, uncovered, and bake for 25–30 minutes until golden and bubbling.
  10. Allow to rest for 5 minutes before serving.

To serve: Spoon into bowls and top with warm custard, Greek yoghurt or vanilla ice cream.

Vegan swap: Replace butter with plant-based butter or coconut oil and serve with dairy-free custard or coconut yoghurt.

OrganicBox tip: This is a wonderful way to use apples and bananas that are becoming a little too ripe. Leftovers make a delicious breakfast with yoghurt.
