Warm Apple & Banana Cinnamon Oat Bake with Mandarin

A cosy, wholesome dessert (or breakfast!) featuring soft, cinnamon-spiced apples and banana baked beneath a loosely scattered golden oat topping. Fresh mandarin segments and a dollop of Greek yoghurt add a bright, tangy finish that balances the warm sweetness. Simple, naturally sweetened, and endlessly versatile, it's just as good served warm from the oven for dessert as it is spooned over yoghurt the next morning.

Serves: 4 | Cooking Time:

  • 600g apples, peeled, cored and sliced
  • 2 bananas, sliced
  • 2 mandarins
  • 120g rolled oats
  • 50g flour
  • 50g butter, melted
  • 2 tbsp maple syrup or honey
  • 1 tsp cinnamon
  • ½ tsp vanilla
  • 2 tbsp water
  • Greek yoghurt, to serve

  1. Preheat oven to 180°C fan-forced / 200°C conventional.
  2. Place the sliced apples in a medium baking dish.
  3. Add cinnamon, vanilla and 2 tbsp water. Toss together.
  4. Bake the apples for 10 minutes to start softening them.
  5. Remove from the oven and gently fold through the sliced banana.
  6. Combine oats, flour, melted butter and maple syrup/honey.
  7. Scatter the oat mixture loosely over the fruit. Unlike a traditional crumble, don't completely cover the fruit.
  8. Bake for another 20–25 minutes, until golden and bubbling.
  9. Peel the mandarins and separate into segments.
  10. Serve the warm apple and banana oat bake with fresh mandarin and Greek yoghurt.

This also makes afantastic breakfast the next morning.
