Vegetable & Corn Fritters

Serves: | Cooking Time:

  • 1 × 400g tin corn kernels, drained
  • 1 zucchini, grated
  • 1 carrot, grated
  • 2 eggs
  • ½ cup flour
  • Salt and pepper

  1. Mix all ingredients.
  2. Spoon into frying pan.
  3. Cook until golden both sides.
  4. Serve with cucumber and tomato salad.
