Turkish-Style Turkey, Silverbeet & Feta Gözleme
This is our something-different meal for Week 43! Gözleme is a traditional Turkish filled flatbread, cooked until golden and crispy.
We're making ours with turkey mince, silverbeet and feta. It's a wonderful way to use leafy greens, and leftovers are fantastic for lunches.
Protein: 500g Certified Organic Turkey Mince
Filling
- 500g turkey mince
- 1 bunch silverbeet
- 1/2 brown onion, finely diced
- 2 garlic cloves, crushed
- 100g feta, crumbled
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1 tbsp olive oil
- Salt and pepper
Easy homemade dough
- 3 cups plain flour
- 1 cup Greek yoghurt
- 1/2 cup water, approximately
- 1 tsp salt
- 1 tbsp olive oil
To serve
- Greek yoghurt
- Lemon juice
- Optional fresh herbs
Prepare the dough
- Combine flour and salt in a large bowl.
- Add Greek yoghurt, olive oil and enough water to form a soft dough.
- Knead on a lightly floured surface for 4–5 minutes until smooth.
- Cover and rest for 15 minutes.
Make the filling
- Wash silverbeet thoroughly. Separate stems and leaves, finely chopping both.
- Heat olive oil in a frying pan and cook onion and silverbeet stems for 3–4 minutes.
- Add garlic and turkey mince. Cook, breaking up the mince, until cooked through.
- Stir through cumin, paprika and chopped silverbeet leaves. Cook until the greens have wilted and excess moisture has evaporated.
- Remove from heat, allow to cool slightly, then stir through crumbled feta.
Assemble and cook
- Divide dough into 4 equal portions.
- Roll each portion into a thin oval or rectangle.
- Spoon filling over one half of each piece, leaving a border around the edges.
- Fold the other half over and press the edges firmly to seal.
- Heat a lightly oiled frying pan over medium heat.
- Cook each gözleme for approximately 3–4 minutes per side until golden brown and the dough is cooked through.
- Slice into triangles and serve with yoghurt mixed with lemon juice.
QUICK VERSION: Use large ready-made wraps instead of homemade dough. Place filling on one half, fold over and pan-fry until golden.
Make-ahead tip: The filling can be prepared the day before and refrigerated.
