Turkey, Zucchini & Sweet Potato Cottage Pie

  • 500g turkey mince
  • 2 zucchinis, grated
  • 1 onion (or leek)
  • 600g sweet potato
  • 1 carrot, grated
  • 1 cup stock
  • 1 tbsp tomato paste

  1. Boil sweet potato and mash.
  2. Brown turkey mince with onion/leek.
  3. Add carrot, zucchini, stock and tomato paste.
  4. Simmer until thickened.
  5. Transfer to baking dish.
  6. Top with mash.
  7. Bake at 190°C for 25 minutes.
