Turkey & Zucchini Stuffed Spaghetti Squash

- 1 spaghetti squash
- 1 zucchini
- 1 tomato
- ½ red onion
- Handful baby spinach

- 500g turkey mince (link to turkey mince)
Pantry
- Olive oil
- 2 garlic cloves
- 1 tsp dried oregano or Italian herbs
- Salt & pepper
- Optional: grated cheese
- Heat oven to 200°C.
- Cut spaghetti squash in half lengthwise and remove seeds.
- Drizzle with olive oil and roast cut-side down for 35–40 minutes.
- Meanwhile sauté onion and garlic in olive oil.
- Add turkey mince and cook until browned.
- Stir in chopped zucchini and diced tomato.
- Add herbs, salt and pepper.
- Stir through spinach until wilted.
- Use a fork to scrape the spaghetti squash strands.
- Spoon turkey mixture into the squash halves.
- Optional: top with cheese and return to oven for 5 minutes.
