Turkey & Zucchini Stuffed Spaghetti Squash

  • 1 spaghetti squash
  • 1 zucchini
  • 1 tomato
  • ½ red onion
  • Handful baby spinach

  • 500g turkey mince (link to turkey mince)

Pantry

  • Olive oil
  • 2 garlic cloves
  • 1 tsp dried oregano or Italian herbs
  • Salt & pepper
  • Optional: grated cheese

  1. Heat oven to 200°C.
  2. Cut spaghetti squash in half lengthwise and remove seeds.
  3. Drizzle with olive oil and roast cut-side down for 35–40 minutes.
  4. Meanwhile sauté onion and garlic in olive oil.
  5. Add turkey mince and cook until browned.
  6. Stir in chopped zucchini and diced tomato.
  7. Add herbs, salt and pepper.
  8. Stir through spinach until wilted.
  9. Use a fork to scrape the spaghetti squash strands.
  10. Spoon turkey mixture into the squash halves.
  11. Optional: top with cheese and return to oven for 5 minutes.
