Turkey, Mushroom & Zucchini Lettuce-Style Bowls

Protein: Turkey mince 500g

From the Box

  • Mushrooms – 200g, diced
  • Zucchini – 300g, grated
  • Brown onion – 1 medium (~120g) diced
  • Baby spinach – 1 handful
  • Cucumber – ½, diced
  • Cherry tomatoes – ½ punnet

Pantry

Soy sauce, garlic, olive oil, rice or noodles

  1. Cook rice or noodles.
  2. Sauté onion and garlic in olive oil.
  3. Add turkey mince and cook until browned.
  4. Stir in mushrooms and zucchini and cook 5 minutes.
  5. Add splash soy sauce and simmer briefly.
  6. Serve over rice topped with cucumber, spinach and tomatoes.
