Turkey Mince & Sweet Corn Lettuce Cups

Fresh, crunchy and quick – savoury turkey mince with sweet corn and vegetables wrapped in crisp iceberg lettuce.

  • 500g turkey mince
  • 1 sweet corn cob
  • 150g sugar snap peas
  • 150g baby carrots
  • Approx. ½ iceberg lettuce
  • 150g Lebanese cucumber

Pantry ingredients

  • 1 tbsp olive or sesame oil
  • 2 garlic cloves, crushed
  • 1 tsp grated fresh ginger – optional
  • 3 tbsp tamari or soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil – optional
  • Rice or noodles to serve – optional

  1. Carefully remove 8–12 good-sized leaves from the iceberg lettuce. Wash, dry and refrigerate until serving.
  2. Slice the kernels from the corn cob.
  3. Finely dice or grate the carrots. Thinly slice the sugar snap peas and cucumber.
  4. Heat oil in a large frying pan over medium-high heat.
  5. Add the turkey mince and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned and cooked through.
  6. Add garlic and ginger and cook for another minute.
  7. Add the carrot, corn and sugar snap peas. Stir-fry for 3–4 minutes so the vegetables remain slightly crunchy.
  8. Add tamari, honey and sesame oil. Toss everything together and cook for another 1–2 minutes.
  9. Spoon the turkey mixture into the lettuce cups.
  10. Top with fresh cucumber and serve.

For bigger appetites: Serve with rice or noodles, or let everyone build their own bowls with shredded lettuce underneath.
