6 Beef Sausages
500g Pumpkin (cubed)
500g Potatoes (cubed)
2 Carrots (thick rounds)
1 Red Onion (wedged).
Toss all the veggies in a large tray with olive oil, salt, and pepper. Nestled the sausages among the veggies. Bake at 200°C for 30–35 minutes until the sausages are golden and the pumpkin is caramelized.
