Sweet Corn Zucchini Fritters
Want a quick meal that turns a few vegetables into something the whole family will eat? These crispy fritters combine sweet corn and zucchini from your Organic Large Mixed Produce Box with garlic and herbs for golden, crunchy cakes that work for breakfast, lunch, or dinner.
- 1 sweet corn cob, kernels removed
- 300g zucchini, grated
- 2 cloves garlic, minced
- 1 small brown onion, finely diced
- 2 organic eggs, beaten
- 1/2 cup plain flour
- 1/2 cup grated organic cheese
- 1 teaspoon baking powder
- Fresh herbs (parsley), chopped
- Salt and pepper to taste
- Olive oil for frying
To Serve:
- Remove the corn kernels from the cob using a sharp knife.
- Grate the zucchini and squeeze out excess moisture using a clean tea towel. This stops the fritters from going soggy.
- Place the corn kernels, grated zucchini, minced garlic, and diced onion in a large bowl.
- Add the beaten eggs, flour, grated cheese, baking powder, herbs, salt, and pepper. Mix well until everything binds together.
- Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Scoop 1/4 cup of mixture per fritter into the pan and flatten slightly with a spatula.
- Cook for 3-4 minutes per side until golden brown and cooked through. Work in batches and add more oil as needed.
- Drain on paper towels. Serve hot with Greek yoghurt, lemon wedges, and fresh lettuce on the side.
Storage Tips:
Refrigerator: Store cooked fritters in an airtight container for up to 3 days.
Freezer: Freeze cooked fritters between layers of baking paper for up to 2 months.

Variations:
- Spiced Version: Add cumin and paprika for warmth.
- Different Cheese: Use crumbled organic feta instead of cheddar.
- Gluten-Free: Replace flour with chickpea flour or almond meal.
