Superfood Rainbow Bowl

This stunning superfood rainbow bowl delivers nutrition and beauty in every bite. Using fresh organic vegetables from your Adelaide organic box delivery, this complete meal combines vibrant colours, varied textures, and delicious flavours that make healthy eating a pleasure.

Serves: 4 | Cooking Time: 30 minutes

  • 400g carrots, ribboned or grated
  • 400g beetroot, grated or spiralized
  • 300g cucumber, sliced
  • 2 small avocados, sliced
  • 1 punnet cherry tomatoes, halved
  • 2 cups superfood mix
  • 1 bunch spinach
  • 2 cups cooked quinoa or brown rice
  • Organic Chicken 400g - grilled and sliced, OR chickpeas
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper
  • Sesame seeds, pumpkin seeds, or sunflower seeds

  1. Cook quinoa or brown rice according to package directions. Set aside to cool slightly.
  2. Prepare vegetables: Grate or spiralize beetroot and carrots. Slice the cucumber. Halve cherry tomatoes.
  3. If using chicken, grill or pan-fry until cooked through. Slice thinly.
  4. Make the tahini dressing: Whisk together tahini, lemon juice, olive oil, minced garlic, and 2-3 tablespoons water until smooth. Season with salt and pepper.
  5. Assemble the bowls: Divide quinoa/rice between 4 bowls as the base.
  6. Arrange superfood mix, spinach, grated beetroot, grated carrots, cucumber, cherry tomatoes, and avocado in sections around each bowl.
  7. Top with grilled chicken or chickpeas. Drizzle generously with tahini dressing.
  8. Sprinkle with mixed seeds. Serve immediately with extra dressing on the side.

Storage: Store components separately. Assemble fresh bowls as needed over 2-3 days.
