Stuffed Zucchini Boats
These Mediterranean stuffed zucchini boats are healthy, colourful, and packed with flavour. Large organic zucchini from your organic box Large Family Box are hollowed out and filled with a savoury mixture of tomatoes, herbs, and cheese, then baked until tender and golden. They're naturally low-carb and gluten-free!
- 4 large zucchini (about 300g total - may need extra)
- 400g tomatoes, diced
- 400g red onions, finely diced
- 2 cups baby spinach, chopped
- 1 bunch chard, chopped (optional)
- 200g organic cheese - mozzarella or feta, grated/crumbled
- 1 cup cooked quinoa or rice
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper
- Fresh basil for garnish
- Optional: organic Beef mince 300g OR organic Chicken mince
- Preheat the oven to 190°C. Lightly grease a baking dish.
- Cut each zucchini in half lengthwise. Use a spoon to scoop out the flesh, leaving about 5mm of shell. Chop the scooped flesh and set aside.
- Place zucchini boats in the baking dish, cut side up. Brush with 1 tablespoon of olive oil. Season with salt and pepper.
- Heat the remaining olive oil in a large frying pan over medium heat. Add diced red onions and cook for 4 minutes until soft.
- Add minced garlic and cook for 1 minute. If using mince, add it now and cook until browned.
- Add chopped zucchini flesh and diced tomatoes. Cook for 5 minutes until the tomatoes break down.
- Add chopped spinach and chard. Cook for 2 minutes until wilted. Stir in cooked quinoa or rice, dried oregano, basil, salt, and pepper.
- Remove from heat. Stir in half the grated cheese. Spoon the filling generously into each zucchini boat, mounding it up.
- Top each boat with the remaining cheese. Cover the dish with foil and bake for 20 minutes.
- Remove foil and bake for another 10 minutes until zucchini is tender and cheese is golden. Let it rest for 5 minutes. Garnish with fresh basil.
Serve with a simple green salad, crusty bread, or roasted vegetables. Perfect light dinner that's naturally gluten-free!
Storage: You can keep it for 3 days in the fridge. Reheat in the oven or microwave.
Make it Vegan: Skip the cheese or use vegan cheese. The filling is delicious on its own!
Mexican Style: Use taco seasoning, black beans, corn, and top with cheddar cheese!
