Smoky Sweet Potato & Black Bean Hash

A flavorful vegetarian meal. If you want extra protein, you can fry an egg to put on top.

Pantry Staples: 

  • Oil
  • Smoked Paprika
  • Cumin
  • Onion powder
  • Salt

Instructions:

  1. Boil the diced sweet potato for 5 minutes to soften slightly, then drain (or sauté raw if cut very small).
  2. Heat oil in a skillet. Add the sweet potatoes and fry until they start to crisp up and brown.
  3. Add the black beans, smoked paprika, cumin, and salt. Stir to combine and heat through.
  4. Toss in the baby spinach at the very end and stir until just wilted.
  5. Optional: Make wells in the hash and crack eggs into them (or fry eggs separately) and cook until whites are set.
  6. Serve with hot sauce or any leftover avocado.
