Smoky Sweet Potato & Black Bean Hash
A flavorful vegetarian meal. If you want extra protein, you can fry an egg to put on top.
Fresh Ingredients:
- 0.5kg Sweet Potato (diced small)
- 400g Black Beans (drained)
- Baby Spinach
- 2-4 Eggs (optional)
Pantry Staples:
- Oil
- Smoked Paprika
- Cumin
- Onion powder
- Salt
Instructions:
- Boil the diced sweet potato for 5 minutes to soften slightly, then drain (or sauté raw if cut very small).
- Heat oil in a skillet. Add the sweet potatoes and fry until they start to crisp up and brown.
- Add the black beans, smoked paprika, cumin, and salt. Stir to combine and heat through.
- Toss in the baby spinach at the very end and stir until just wilted.
- Optional: Make wells in the hash and crack eggs into them (or fry eggs separately) and cook until whites are set.
- Serve with hot sauce or any leftover avocado.
