Smoky Kidney Bean Burrito Bowls

Protein: 1 tin red kidney beans (drained)
Pantry Staple: Cooked rice (use remaining from Meal 2)

From Your Box:

  • 200g tomatoes (diced)
  • ½ cucumber (~150g, diced)
  • ½ cos lettuce (shredded)
  • 1 carrot (~100g, grated)
  • 2 spring onions (sliced)

Pantry:

Olive oil, cumin, paprika, garlic, optional yoghurt or cheese

  1. Heat beans in pan with olive oil, garlic, cumin and paprika.
  2. Prepare salad with tomato, cucumber, lettuce and carrot.
  3. Assemble bowls with rice, beans and fresh veggies.
  4. Top with yoghurt or cheese if desired.
