Smoky Chicken Mince Rice Skillet

Serves: 4 | Cooking Time:

  • 500g chicken mince
  • 1 zucchini, diced
  • 2 tomatoes, diced
  • 1/2 carrot bunch, sliced
  • 2 handfuls spinach
  • 1 cup rice
  • 2 cups stock/water
  • 1 tsp smoked paprika
  • 1 tsp Italian herbs
  • 2 garlic cloves
  • Olive oil

  1. Brown chicken mince in olive oil.
  2. Add garlic, zucchini, carrot and tomatoes.
  3. Stir in rice, paprika and herbs.
  4. Add stock/water.
  5. Simmer covered 15–18 mins until rice is cooked.
  6. Stir through spinach before serving.

Optional: Top with yoghurt or feta.
