Smoky Black Bean Loaded Potatoes

  • 400g tin black beans

Box Ingredients

  • Remaining potatoes
  • 1/4 cabbage
  • 1 cucumber
  • Baby spinach
  • Remaining cherry tomatoes

Pantry Staples

  • Olive oil
  • Smoked paprika
  • Cumin
  • Salt & pepper
  • Yoghurt or avocado (optional)

  1. Bake whole potatoes at 200°C for 45–50 minutes until crispy outside and soft inside.
  2. Drain black beans and heat in a pan with: 1 tsp smoked paprika, 1/2 tsp cumin, splash of water
  3. Finely shred cabbage and sauté lightly.
  4. Dice cucumber and tomatoes into a quick salsa.
  5. Split potatoes and top with spinach, cabbage, black beans and salsa.
  6. Add yoghurt or avocado if desired.
