Smoky Black Bean Loaded Potatoes

Box Ingredients
- Remaining potatoes
- 1/4 cabbage
- 1 cucumber
- Baby spinach
- Remaining cherry tomatoes
Pantry Staples
- Olive oil
- Smoked paprika
- Cumin
- Salt & pepper
- Yoghurt or avocado (optional)
- Bake whole potatoes at 200°C for 45–50 minutes until crispy outside and soft inside.
- Drain black beans and heat in a pan with: 1 tsp smoked paprika, 1/2 tsp cumin, splash of water
- Finely shred cabbage and sauté lightly.
- Dice cucumber and tomatoes into a quick salsa.
- Split potatoes and top with spinach, cabbage, black beans and salsa.
- Add yoghurt or avocado if desired.
