Slow Cooker Lentil & Root Vegetable Stew

Replace:Chicken Drumsticks
With:300g dried brown lentils (or 2 tins lentils)

Protein

  • 300g dried brown lentils (or 2 tins lentils)

Box Contents

  • 500g potatoes, diced
  • 300g sweet potato, diced
  • 400g turnips, diced
  • 250g carrots, sliced
  • 2 brown onions, diced

Pantry Staples

  • 3 cups chicken stock
  • 2 tbsp tomato paste
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper

  1. Place potatoes, sweet potato, turnips, carrots and onions into the slow cooker.
  2. Mix stock, tomato paste, thyme, bay leaves, salt and pepper and pour over.
  3. Cook on Low for 7-8 hours or High for 4-5 hours.
  4. Remove bay leaves before serving.
  5. Serve in large bowls with crusty bread if desired.
