Slow Cooker Chicken Drumstick & Root Vegetable Stew

- 500g potatoes, diced
- 300g sweet potato, diced
- 400g turnips, diced
- 250g carrots, sliced
- 2 brown onions, diced
Pantry Staples
- 3 cups chicken stock
- 2 tbsp tomato paste
- 2 tsp dried thyme
- 2 bay leaves
- Salt and pepper
- Place potatoes, sweet potato, turnips, carrots and onions into the slow cooker.
- Add drumsticks on top.
- Mix stock, tomato paste, thyme, bay leaves, salt and pepper and pour over.
- Cook on Low for 7-8 hours or High for 4-5 hours.
- Remove bay leaves before serving.
- Serve in large bowls with crusty bread if desired.
