Slow Cooker Beef & Vegetable Stew

450g beef stir fry strips

500g potatoes
300g sweet potato
250g carrots
2 tomatoes

Pantry Staples

  • 3 cups beef stock
  • 2 tbsp tomato paste
  • 2 garlic cloves
  • 1 tsp dried thyme
  • Salt & pepper

  1. Heat a pan over medium-high heat and brown the beef strips for 2–3 minutes.
  2. Chop potatoes, sweet potato, carrots and tomatoes into chunky pieces.
  3. Add beef, vegetables, garlic, tomato paste, thyme, salt and pepper into the slow cooker.
  4. Pour over beef stock until ingredients are just covered.
  5. Cook on LOW for 7–8 hours or HIGH for 4 hours.
  6. Lightly mash some potatoes into the stew to thicken if desired. Adjust seasoning and serve.
