Silverbeet Garlic Saute

- 1 bunch silverbeet, washed and chopped
- 4 cloves garlic, thinly sliced
- 3 tablespoons olive oil
- 1/2 teaspoon chilli flakes (optional)
- Juice of 1/2 lemon
- Salt and pepper to taste
Optional:
- Pine nuts, toasted
- Sultanas or currants
- Grated parmesan
Wash the silverbeet thoroughly to remove any grit. Separate the stems from the leaves. Slice the stems into 1cm pieces and roughly chop the leaves. Heat olive oil in a large frying pan over medium heat. Add the sliced garlic and chilli flakes if using. Cook for 1 minute until fragrant but not browned. Add the silverbeet stems first as they take longer to cook. Sauté for 2-3 minutes until they start to soften. Add the chopped leaves to the pan. Toss with tongs to coat in the garlic oil. Cook for 3-4 minutes until the leaves are wilted but still vibrant green. Don't overcook them or they'll go mushy. Squeeze fresh lemon juice over the top and season with salt and pepper. Toss once more. Transfer to a serving plate. Top with toasted pine nuts, sultanas, or grated parmesan if using.
Storage Tips:
Refrigerator: Store cooked silverbeet for up to 3 days in an airtight container. Reheating: Warm gently in a pan with a splash of water or stock. Use the Stems: Don't throw the stems away. They add great texture and absorb flavour.
