Savory Chicken & Mushroom "San Choy"
A lighter meal that uses cucumber and grapes for a refreshing contrast.

700g Chicken mince
200g White Mushrooms, finely diced
2 Carrots, grated
1 Lebanese Cucumber, diced
1 cup Red Grapes, halved
2 tbsp Oyster sauce
2 cloves Garlic, minced
Seasoning: 1 tsp Onion powder, Salt, squeeze of Lemon
In a large pan, sauté mushrooms and carrots until the moisture from the mushrooms has evaporated.
Add chicken mince and garlic; cook until browned and crumbly.
Stir in the oyster sauce and onion powder; cook for 3 minutes until sticky.
In a separate bowl, toss the cucumber and grapes with a little salt and lemon juice.
Serve the savory chicken mix in bowls (or lettuce cups) topped with the cold cucumber and grape salsa.
