Savory Chicken & Mushroom "San Choy"

A lighter meal that uses cucumber and grapes for a refreshing contrast.

  • 700g Chicken mince
  • 200g White Mushrooms, finely diced
  • 2 Carrots, grated
  • 1 Lebanese Cucumber, diced
  • 1 cup Red Grapes, halved
  • 2 tbsp Oyster sauce
  • 2 cloves Garlic, minced
  • Seasoning: 1 tsp Onion powder, Salt, squeeze of Lemon

  • In a large pan, sauté mushrooms and carrots until the moisture from the mushrooms has evaporated.
  • Add chicken mince and garlic; cook until browned and crumbly.
  • Stir in the oyster sauce and onion powder; cook for 3 minutes until sticky.
  • In a separate bowl, toss the cucumber and grapes with a little salt and lemon juice.
  • Serve the savory chicken mix in bowls (or lettuce cups) topped with the cold cucumber and grape salsa.
