Sausage, Potato & Veggie Skillet with Garlicky Greens
A hearty, no-fuss one-pan dinner packed with golden roasted potatoes, juicy chicken sausages, and a colourful mix of garlicky vegetables. Simple pantry seasonings like smoked paprika and oregano bring warmth and depth, while a finishing squeeze of lemon adds brightness to every bite. It's rustic, filling, and family-friendly — with minimal washing up, making it perfect for busy weeknights.
- 700g chicken sausages
- 500g potatoes, cut into 2cm pieces
- 200g zucchini, sliced
- 250g green beans, trimmed
- 150g carrots, sliced
- 100g green cabbage, sliced
- 2 cloves garlic, crushed
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt and pepper
- Lemon wedges, optional
- Preheat oven to 200°C fan-forced / 220°C conventional.
- Place the potatoes on a lined baking tray. Toss with 1 tbsp olive oil, paprika, salt and pepper.
- Roast for 20 minutes.
- Meanwhile, heat the remaining oil in a large ovenproof frying pan over medium heat.
- Add the sausages and cook for 6–8 minutes, turning regularly, until browned. Remove and slice into thick pieces.
- Add the carrots and zucchini to the pan and cook for 3–4 minutes.
- Add the beans, cabbage, garlic and oregano and cook for another 2 minutes.
- Add the roasted potatoes and sliced sausages back to the pan.
- Toss everything together and place in the oven for 10 minutes, or until the sausages are completely cooked through and the vegetables are tender.
- Finish with a squeeze of lemon if desired.
This should be a great one-pan family dinner with very little washing up.
