Sausage, Potato & Veggie Skillet with Garlicky Greens

A hearty, no-fuss one-pan dinner packed with golden roasted potatoes, juicy chicken sausages, and a colourful mix of garlicky vegetables. Simple pantry seasonings like smoked paprika and oregano bring warmth and depth, while a finishing squeeze of lemon adds brightness to every bite. It's rustic, filling, and family-friendly — with minimal washing up, making it perfect for busy weeknights.

Serves: 4 | Cooking Time:

  • 700g chicken sausages
  • 500g potatoes, cut into 2cm pieces
  • 200g zucchini, sliced
  • 250g green beans, trimmed
  • 150g carrots, sliced
  • 100g green cabbage, sliced
  • 2 cloves garlic, crushed
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper
  • Lemon wedges, optional

  1. Preheat oven to 200°C fan-forced / 220°C conventional.
  2. Place the potatoes on a lined baking tray. Toss with 1 tbsp olive oil, paprika, salt and pepper.
  3. Roast for 20 minutes.
  4. Meanwhile, heat the remaining oil in a large ovenproof frying pan over medium heat.
  5. Add the sausages and cook for 6–8 minutes, turning regularly, until browned. Remove and slice into thick pieces.
  6. Add the carrots and zucchini to the pan and cook for 3–4 minutes.
  7. Add the beans, cabbage, garlic and oregano and cook for another 2 minutes.
  8. Add the roasted potatoes and sliced sausages back to the pan.
  9. Toss everything together and place in the oven for 10 minutes, or until the sausages are completely cooked through and the vegetables are tender.
  10. Finish with a squeeze of lemon if desired.

This should be a great one-pan family dinner with very little washing up.
