Rustic Sausage, Kidney Bean & Vegetable Soup

Protein

  • 1 pack beef sausages (450g)
  • 1 tin red kidney beans

Box Contents

  • Remaining potatoes (500g)
  • Remaining carrots
  • Remaining celery
  • Remaining broccoli stalks and small florets

Pantry

  • 1.5 litres stock
  • 1 bay leaf
  • Salt & pepper

  1. Slice sausages and brown in a soup pot.
  2. Add diced carrots, celery and potatoes.
  3. Pour over stock.
  4. Simmer 20 minutes.
  5. Add kidney beans and broccoli.
  6. Cook another 10 minutes.
  7. Season well and serve.
