Rustic Cottage Pie

OrganicBox Ingredients

  • 500g Beef Mince
  • 1kg Potatoes
  • 2 Carrots
  • 1 bunch Chard

Pantry Ingredients

  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 tbsp tomato paste
  • 1 cup beef stock
  • 1 tbsp Worcestershire sauce
  • 30g butter
  • ¼ cup milk
  • Olive oil
  • Salt and pepper

  1. Preheat the oven to 200°C (180°C fan-forced).
  2. Peel and chop the potatoes.
  3. Boil for 15–20 minutes until tender, then mash with the butter and milk.
  4. While the potatoes cook, heat a little olive oil in a frying pan.
  5. Cook the onion until softened, then add the garlic and diced carrots.
  6. Add the beef mince and cook until browned.
  7. Stir in the tomato paste, Worcestershire sauce and beef stock.
  8. Simmer for 10 minutes.
  9. Stir through the chopped chard until wilted.
  10. Spoon the beef mixture into an ovenproof baking dish.
  11. Spread the mashed potato over the top and rough the surface with a fork.
  12. Bake for 25–30 minutes until golden.

Allow to stand for 5 minutes before serving.
