Rustic Beef & Cauliflower Cottage Pie

A cosy twist on shepherd’s pie using roasted cauliflower through the mash topping.

Protein

  • 500g lean beef mince

Box Contents

  • 700g potatoes
  • 1/2 cauliflower
  • 2 carrots
  • 1 onion
  • 2 garlic cloves

Pantry Staples

  • Olive oil
  • Butter or milk
  • Tomato paste
  • Worcestershire sauce
  • Stock powder
  • Dried herbs

  1. Roast cauliflower florets until golden.
  2. Boil potatoes until soft.
  3. Mash potatoes and roasted cauliflower together.
  4. Cook onion, garlic and carrot in a pan.
  5. Add mince and brown well.
  6. Stir in tomato paste, herbs, Worcestershire and a little stock.
  7. Transfer to baking dish.
  8. Top with cauliflower-potato mash.
  9. Bake until bubbling and golden.
