Rosemary Lamb Sausage & Autumn Veg Tray Bake

Serves: 5 | Cooking Time:

  • 500g rosemary & mint lamb sausages
  • 500g potatoes, chopped
  • 300g sweet potato, chopped
  • 500g butternut pumpkin, chopped
  • 2 purple carrots, sliced
  • 1/3 herb bunch
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt & pepper

To Serve

  • 1/2 cucumber, sliced
  • Yoghurt (optional)

  1. Heat oven to 220C.
  2. Toss potatoes, sweet potato, pumpkin and carrots with oil, paprika, salt and pepper.
  3. Roast for 20 minutes.
  4. Add sausages and roast another 25–30 minutes until golden.
  5. Scatter over chopped herbs.
  6. Serve with cucumber and yoghurt.
