Rosemary Lamb Sausage & Autumn Veg Tray Bake
Serves: 5 | Cooking Time:
- 500g rosemary & mint lamb sausages
- 500g potatoes, chopped
- 300g sweet potato, chopped
- 500g butternut pumpkin, chopped
- 2 purple carrots, sliced
- 1/3 herb bunch
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt & pepper
To Serve
- 1/2 cucumber, sliced
- Yoghurt (optional)
- Heat oven to 220C.
- Toss potatoes, sweet potato, pumpkin and carrots with oil, paprika, salt and pepper.
- Roast for 20 minutes.
- Add sausages and roast another 25–30 minutes until golden.
- Scatter over chopped herbs.
- Serve with cucumber and yoghurt.
