Roasted Vegetable, Bean & Spinach Bake

- 300g sweet potato
- ½ cauliflower
- 1 zucchini
- Remaining baby spinach
- 2 tomatoes
Pantry Staples
- Passata or tomato sauce
- 1 tsp paprika or taco seasoning
- Cheese (optional)
- Preheat oven to 180°C.
- Chop sweet potato and cauliflower, toss with oil and roast for 25 minutes until starting to soften.
- Transfer roasted vegetables to a baking dish.
- Add drained kidney beans, chopped zucchini, tomatoes and spinach.
- Pour over sauce, add seasoning and mix gently.
- Top with cheese if using.
- Bake for 20 minutes until bubbling and heated through.
