Roasted Vegetable, Bean & Spinach Bake

  • 300g sweet potato
  • ½ cauliflower
  • 1 zucchini
  • Remaining baby spinach
  • 2 tomatoes

Pantry Staples

  • Passata or tomato sauce
  • 1 tsp paprika or taco seasoning
  • Cheese (optional)

  1. Preheat oven to 180°C.
  2. Chop sweet potato and cauliflower, toss with oil and roast for 25 minutes until starting to soften.
  3. Transfer roasted vegetables to a baking dish.
  4. Add drained kidney beans, chopped zucchini, tomatoes and spinach.
  5. Pour over sauce, add seasoning and mix gently.
  6. Top with cheese if using.
  7. Bake for 20 minutes until bubbling and heated through.
