Roasted Pumpkin & Black Bean "Taco" Bowls

  • Black Beans
  • 0.5kg Pumpkin
  • Iceberg Lettuce
  • Tomatoes, 0.5 bunch Coriander
  • 1 Leb Cucumber

The Meal: Roast the remaining pumpkin cubes. Rinse the black beans and warm them through with a little onion. Build bowls using shredded iceberg lettuce as the base, topped with the pumpkin, beans, and a fresh salsa made from diced tomatoes, cucumber, and coriander.
