Roast Sausages with Pumpkin, Potato & Beetroot Tray Bake

- 1 pack beef sausages (450g)
Box Contents
- 500g potatoes
- Remaining 500g pumpkin
- Beetroot bunch
Pantry
- Olive oil
- Rosemary or mixed herbs
- Salt & pepper
- Heat oven to 200°C.
- Chop vegetables into chunks.
- Toss with oil and herbs.
- Spread on tray and roast 20 minutes.
- Add sausages.
- Roast a further 25-30 minutes.
- Serve with simple salad if desired.
