Roast Sausages with Pumpkin, Potato & Beetroot Tray Bake

Protein

  • 1 pack beef sausages (450g)

Box Contents

  • 500g potatoes
  • Remaining 500g pumpkin
  • Beetroot bunch

Pantry

  • Olive oil
  • Rosemary or mixed herbs
  • Salt & pepper

  1. Heat oven to 200°C.
  2. Chop vegetables into chunks.
  3. Toss with oil and herbs.
  4. Spread on tray and roast 20 minutes.
  5. Add sausages.
  6. Roast a further 25-30 minutes.
  7. Serve with simple salad if desired.
